Cu-cu-cum-brrrrrr!

Craving a snack? Swap your 4pm cookies and lattes for fresh cucumber!

For maximum benefit remove skin and deseed (cucumber seeds cause indigestion).

This beneficial veg contains only 16 kcal per cup and 3 grams of carbs. Its high water content makes it ideal for detoxing and especially for some of you that are not drinking your 8 glasses of water a day or feel dehydrated from coffee or alcohol.

  1. Green Lemonade

I have adapted this recipe from the Natalia Rose’s Raw Food cookbook. It is an amazing drink to have first thing in the morning especially in the summer time. Swap your coffee with a green lemonade and see how much more energized and healthy you will feel!

One serving:

  • ½ peeled and deseeded cucumber
  • 1 medium green apple (for extra sweetness use gala or pink lady)
  • 1 celery stick
  • ½ lime
  • 2-3 lettuce leafs

Juice all ingredients together and enjoy!

  1. Cucumber strips and avocado hummus

Initially I was going to suggest a classic hummus dip for the cucumber sticks- which works wonderfully, but since it is Detox Wednesday I decided to provide a lower calorie, higher nutrient, detoxing version J. This recipe is an adaptation from Gina’s runningtothekitchen blog- http://www.runningtothekitchen.com/2011/07/lemon-rosemary-thyme-avocado-hummus/- with the slight difference in herb ingredients- she uses rosemary and thyme while I use dill and mint for more freshness.

Two servings:

  • ½ can of cannellini beans
  • 1 avocado
  • a squeeze of lime
  • chopped dill and mint
  • a pinch of sea salt
  • cucumber strips- peeled and de-seeded

To make this literally takes just 2 seconds, just blend together and add a tablespoon of water if the consistency is too dense.

  1. Green apple tarator (tzantziki)

I invented this recipe entirely in the spur of the moment- I meant to make a normal tzantziki but was left with extra ingredients at hand that I didn’t want to waste! The outcome was a success and I think I will never go back to the regular recipe again J.

One serving:

  • ½ cucumber- peeled and de-seeded
  • ½ green apple
  • chopped mint and dill
  • 3 teaspoons of yeo valley 0% fat yogurt
  • a sprinkle of salt
  • a squeeze of lime

Method:

  • chop up cucumber and green apple into small squares
  • chop dill and mint
  • season with salt and lime
  • add yogurt and mix together
